Celebrate Christmas Eve at Abiaka this year with king crab stuffed piquillo with romesco aioli and cashew crema; and oxtail encendio veal paella with braised oxtail, blistered sweet drops, micro cilantro and sherry gastrique. For New Year’s Eve, Abiaka will highlight an Alaska king crab leg with osetra caviar, asparagus puree, pickled Thai chilies, basil oil and tomato syrup; and a rack of lamb with creole braised sauce, charred broccolini, baby corn, sherry glazed eggplant and piquillo pomegranate chimichurri.
Cipresso
The resort’s contemporary twist on Italian fare will offer a prix-fixed menu for Christmas Eve. The prix-fixe menu includes gnocco fritto bruschetta with tomatoes and avocado puree; carabineros branzino tartare with lime aioli and Christmas salad; and Maialino porchetta, lemon risotto with salted baked red onion and celery confit. New Year’s Eve specials include burrata lobster with fresh figs and aged balsamic; rabbit, foie gras ravioli with Parmigiano and marsala reduction; risotto ai frutti di mare featuring red shrimp, scallops and octopus; and braised short ribs lollipop with patate filanti, lemon compote and salmoriglio.
Council Oak Steaks & Seafood
The classic American steakhouse will feature a prix-fixed menu featuring wagyu croquettes with whole-grained mustard aioli, pickled mustard seed and black truffles; surf and turf with A5 rib cap, vanilla nage poached lobster and truffle butter; and whole branzino with puttanesca sauce, clams and mussels. New Year’s Eve and New Year’s Day specials include a winter salad with endives, citrus vinaigrette, candy stripe beets, walnuts and goat cheese; various appetizers including butter poached king crab with the avocado mouse, truffle aioli, osetra caviar; foie gras torchon with pâte feuilletée, organic pears, baby arugula, red wine reduction, prosciutto; Hamachi crudo with finger lime, blood orange dressing, pickles Fresno, crispy shallots and garlic; and crispy bone marrow with truffle aioli, pickled mustard seed, fig mustard and pickled vegetable. Various entrees include pan-seared scallop with U8 scallop, chanterelle mushroom, smoke trout roe, Meyer lemon beurre blanc; monkfish with tarragon nage, caviar, braised leeks and compressed fennel salad; A5 olive wagyu strip with truffle dauphinoise potato, olive tapenade, grilled shishito peppers; and surf and turf with wagyu rip cap, carabinero shrimp, charred shrimp, charred broccolini and beurre rogue.

Kuro Christmas Eve and Christmas Day specials will offer a wagyu tenderloin hot stone with house pickles and three kuro sauces; chicken kara-age, furikake, sweet toboggan; and tartare two ways with chu-toro, pickled shallots, gochujang crème fraiche, Hamachi, cucumber salsa and avocado crema. End the year on a high note with Kuro’s New Year’s Eve prix-fixe menu that includes miso ramen, sweet corn, ajitsuke tamago, carsu pork belly; truffle and foie gras terrine, with Sancho onion jam, plum veil; and an Osechi Ryori bento box.

Christmas Eve and Christmas Day specials at Rise Kitchen & Deli will feature crab stuffed mushrooms with drawn butter; grilled swordfish featuring jasmine rice grilled bok choy and miso butter sauce; and panko breaded pork chops with garlic mashed potatoes; roasted baby carrots, and bacon mustard jus. Ring in the New Year with braised short rib, creamy polenta with red wine sauce; and grilled chicken breast with sauteed spinach, goat cheese, crispy prosciutto, sundried tomato butter sauce, garlic mashed potatoes and grilled broccolini.

The Guitar Hotel Light Show
A South Florida landmark, The Guitar Hotel Light Show at Seminole Hard Rock Hollywood runs nightly.
