Council Oak Steaks & Seafood at Seminole Hard Rock Hotel & Casino Introduces New Dinner and Brunch Temptations

 Exciting new wine program unveiled

Hollywood, Fla. (February 27, 2017) – Classic sophistication meets innovative cuisine; Council Oak Steaks & Seafood is the acclaimed steakhouse, bar and lounge located inside the AAA Four Diamond Seminole Hard Rock Hotel & Casino in Hollywood, Fla. For serious steak, seafood and wine lovers, the resort’s award-winning signature steakhouse has been an under-the-radar gem, a must-try for dinner and a popular hotspot for brunch. Council Oak recently introduced new and upgraded dinner menu items, brunch delights and rolled out an exciting Wine Wednesdays program.

“We are always looking to bring an element of intrigue and surprise for our guests, whether they’re already loyal fans or newcomers experiencing Council Oak Steaks & Seafood for the first time,” said Justin Wyborn, vice president of food & beverage for Seminole Hard Rock Hotel & Casino. “The combination of new dinner and brunch items, and a tantalizing new wine program should give plenty of reason to revisit Council Oak or try it for the first time.”

At dinner, new appetizer offerings include Council Oak Bacon, cured and smoked in-house, served with Heirloom tomatoes and aged balsamic vinegar; Jumbo Lump Crab Cakes accompanied by a green papaya salad and smoked onion aioli; and Tuna Tartare with avocado, lemon, cucumber-radish salad and grilled ciabatta bread. New main course selections include USDA 28-Day Prime Dry Aged, 20 oz. Bone-In Ribeye; Iberico Pork Secreto with a citrus chili marinade, fried taro root and avocado tomato salad; and Pan Seared Scallops served with fresh winter truffles, Champagne gastrique and wild mushroom risotto. A new section features dry aged cuts for two and includes both a 32 oz. Bone-In New York Strip and a 48 oz. Porterhouse.

Council Oak’s celebrated Sunday brunch now offers premium upgrades, such as caviar and specialty champagnes, including the exclusive Veuve Clicquot Rich, a sweet French champagne designed to complement a myriad of sweet and spicy fresh ingredients. The new champagnes and caviar selections are available for an additional cost to the existing brunch menu, which features a variety of made-to-order stations, a full raw bar, a dessert bar and a selection of unlimited, premium brunch cocktails.

Also now in place, Wine Wednesdays, a weekly menu of rotating, specially priced bottles hand-selected by sommelier Juan Horta.

“Council Oak’s cellar has over 400 selections from more than a dozen countries,” said Wyborn. “Wine Wednesdays gives us the opportunity to offer a variety of vintages and one-of-a-kind finds to share with our guests. The program is a fun way to help keep our stock fresh and evolving, and gives both wine enthusiasts and novices the chance to try thoughtfully-selected fine wines, specially-priced. Wednesdays may quickly become wine lovers favorite night to dine out.”

Spirits lovers get equal love at Council Oak with the One Ounce Club, which allows guests to sample exclusive, high-end liquors in one ounce increments. Selections vary and often include special editions, such as limited edition Pappy Van Winkle’s Family Reserve 20 Year, Johnnie Walker Blue Label “Year of the Monkey,” Remy Martin Louis XIII and Macallen 30 Year Old Fine Oak. Like the options, prices range depending on the pour, from $23 to $720 per ounce.

Council Oak is open for dinner Sunday through Thursday from 5 to 10:30 p.m. and Friday and Saturday from 5 to 11 p.m. with live entertainment in the bar nightly. Brunch is available on Sunday from 10 a.m. to 2 p.m. Reservations are available by calling 800-937-0010, visiting www.opentable.com or through its mobile application.
