Seminole Hard Rock Hotel & Casino Promotes Chef Louis Marandola to Executive Chef and Chef David Roach to Executive Sous Chef

(April 16, 2014) – Seminole Hard Rock Hotel & Casino – Hollywood has promoted Chef Louis "Lou" Marandola to Executive Chef and Chef David "Ray" Roach to Executive Sous Chef at South Florida's AAA Four-Diamond award-winning resort. The appointments were announced by Vice President of Food & Beverage Justin Wyborn.

"This impressive pair demonstrates a valuable chemistry and fresh approach to reflect our resort's dynamic, multi-faceted culture."


In his new role, Chef Marandola is responsible for directing culinary operations of the entire resort including Council Oak Steaks & Seafood, Blue Plate Restaurant, The Beach Club, Banquets and Catering and the Constant Grind coffee and pastry shop. Under his direction, the esteemed culinary team will continue to customize menus inspired by the finest seasonal offerings and local ingredients whenever possible.


A seasoned culinary talent, Chef Marandola is a restaurant veteran of more than 25 years and brings a passion and purpose to his role as kitchen mentor. He's credited with fostering individualized student training programs with Johnson & Wales University, as well as resort-wide collaborative culinary efforts to serve the region's most important movers, shakers and celebrities throughout the many different restaurants and high-profile events at Seminole Hard Rock.


Prior to joining Seminole Hard Rock, Chef Marandola served as executive chef at the Radisson Bahia Mar in Fort Lauderdale, and for nine years he co-owned Fabio's Italian Restaurant (named after his father's favorite singer, Fabian Forte) with his brother, a 100-seat establishment in Cape Cod.


This year, the Rhode Island transplant will celebrate his 10th anniversary with Seminole Hard Rock Hollywood having been an integral part of the resort's grand opening strategy in January 2004. Originally hand-picked by top management to serve as a food and beverage analyst, he eventually found his way back to the kitchen to share his traditional family Italian recipes and to employ his executive management skills by building an expert kitchen team.


Chef Roach joined Seminole Hard Rock in 2009 as Sous Chef of Council Oak Steaks & Seafood, Seminole Hard Rock's multi-award winning fine-dining restaurant. He was subsequently promoted to [lead] Chef at Council Oak after demonstrating passion, instinctive talent and an extensive knowledge of producing an elevated dining experience.


His appealing background includes his time as Sous Chef for La Brochette Bistro, a Golden Spoon, DiRona and 2005 Best of Broward County award winner; Executive Chef for Darrel and Oliver's East City Grill, a Four-Star and DiRona award-winning restaurant in Weston; and six-years combined at Mark's Las Olas in Fort Lauderdale and La Vielle Maison in Boca Raton. In addition, Chef Roach served as Executive Chef for two years at The Wildflower at The Lodge at Vail, Colorado, a Mobil Four-Star restaurant. He graduated with an associate of science degree from Johnson & Wales University in Miami, Florida.
