

Council Oak Steaks & Seafood Restaurant at Seminole Hard Rock Hotel & Casino Introduces New Menu Items
Hollywood, Fla. – Council Oak Steaks & Seafood, the highly acclaimed world-class gourmet restaurant at the Seminole Hard Rock Hotel & Casino, has introduced several new menu items.
Sophisticated, yet inviting and friendly, the Council Oak, presided over by Executive Chef Peter Mavraides, offers genuine, 100% U.S.D.A. prime dry-aged stockyard beef from a butcher shop located in the front of the restaurant. The freshest line-caught seafood from local waters, plus live Maine lobster from its own custom-made saltwater tanks is also served.
"The summer months have brought us a wealth of new seasonal fruits, vegetables and main plate seafood and meat selections," said Mavraides. The art of the Council Oak palate is being able to utilize the freshest offerings of the season to create an innovative, tasteful and colorful presentation. New appetizers ranging from $16 to $19 include Pan-Roasted Clams with Spanish-smoked chorizo, tomato, white wine, lemon and cilantro, French Fried Calamari with Cajun remoulade and spring onion aioli and Ahi Tuna Tartare with truffle oil, shallots and herbed toast. The additions complement the current favorites of Blackened Tenderloin Beef Tips with roasted garlic and white wine, Oysters Rockefeller with spinach, bacon and béarnaise, Escargot and Council Oak Crab Cakes set on a bouquet of micro greens and mustard sauce. Raw Bar offerings are also available starting at $8, include Alaskan King Crab, lobster, colossal shrimp, Blue Point oysters and little neck clams available as single or four-portion servings.
Council Oak's newest salad is a Baby Arugula and Blood Orange Salad ($12) with feta cheese, cucumber, tomato, toasted almonds and aged sherry vinaigrette. Other traditional offerings, also at $12, still include the Classic Caesar Salad, Mozarella Caprese and Ozzie's Spinach Salad with dried cherries, roasted bell peppers and bacon.
Main plate Council Oak specialty additions range from $34 to $38 and include a Bourbon BBQ Berkshire Pork Chop with truffled corn pudding, braised collard greens and a goat cheese cream, Harissa – Herb- Marinated Free Range Chicken with almond-currant couscous, cucumber riatia and preserved lemon jus, Colossal Shrimp and Lobster Linguini with diced tomato, olives, capers, white wine, herbs, feta and lemon, Pan Seared Jumbo Sea Scallops with a boniato mash, jicama-mango slaw and tomato lime coulis and Porcini Dusted Chilean Sea bass with roasted fingerling potatoes, fresh English peas and horseradish beurre-blanc.
The ultimate connoisseur can still order the finest cuts of beef from $36 to $49. Select from New York Strip, Long Bone Cowboy Ribeye, Porterhouse, Prime Veal Chop, Roast Prime Rib and Filet Mignon. Delicious garnishes range from exotic chanterelle, crimini, oyster and shiitake mushrooms to lump crab meat to au poivre black peppercorn crust and aged Maytag bleu cheese. The newest side complement is sautéed broccoli rabe ($8).
The Council Oak also features an extensive wine-by-the-glass selection and intimate wine-bar seating. Live entertainment is offered nightly in a separate lounge area. Sunday Brunches complete with a chocolate fountain dessert station sets the standard even higher with a great way to start off the week.
